Easy Thai Chicken Soup

This Easy Thai Chicken Soup provides a warm and flavorful dish that combines rich broth with tender chicken and fragrant spices.

  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 tablespoon ginger, grated
  • 1 tablespoon red curry paste
  • 4 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 can (14 oz) coconut milk
  • 2 cups mushrooms, sliced
  • 1 red bell pepper, sliced
  • 2 tablespoons fish sauce
  • 1 tablespoon lime juice
  • 1 handful fresh cilantro, chopped

Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the onion, garlic, and ginger. Sauté until the onion is translucent.
  3. Stir in the red curry paste and cook for another minute.
  4. Pour in the chicken broth and bring to a simmer.
  5. Add the shredded chicken, coconut milk, mushrooms, and red bell pepper. Simmer for 10 minutes.
  6. Stir in the fish sauce and lime juice.
  7. Serve hot, garnished with fresh cilantro.

Notes

  • This soup can be easily customized with your favorite vegetables.
  • Adjust the level of spice by using more or less red curry paste.
