Easy Thai Chicken Curry Soup

  • 1 tablespoon coconut oil
  • 1 pound chicken breast, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 2 tablespoons red curry paste
  • 4 cups chicken broth
  • 1 can coconut milk
  • 2 cups mixed vegetables (bell peppers, carrots, snap peas)
  • 2 tablespoons fish sauce
  • 1 tablespoon lime juice
  • fresh cilantro, for garnish

Instructions

  1. In a large pot, heat the coconut oil over medium heat.
  2. Add the diced chicken and cook until browned.
  3. Stir in the onion, garlic, and ginger; sauté until the onion is translucent.
  4. Add the red curry paste and cook for 1-2 minutes until fragrant.
  5. Pour in the chicken broth and bring to a simmer.
  6. Add the coconut milk and mixed vegetables; cook until the vegetables are tender.
  7. Stir in the fish sauce and lime juice, then remove from heat.
  8. Serve hot, garnished with fresh cilantro.

Notes

  • For extra spice, add sliced jalapeños or chili flakes.
  • Can substitute chicken with tofu for a vegetarian option.
