Easy Ground Beef Enchiladas

  • 1 pound ground beef
  • 1 can enchilada sauce
  • 8 flour tortillas
  • 2 cups shredded cheese
  • 1 onion, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a skillet, brown the ground beef over medium heat. Drain excess fat.
  3. Add onion, garlic powder, chili powder, and cumin to the skillet, cooking until onion is tender.
  4. Spread a small amount of enchilada sauce in the bottom of a baking dish.
  5. Fill each tortilla with the beef mixture and a handful of cheese, roll up, and place seam-side down in the baking dish.
  6. Pour remaining enchilada sauce over the top and sprinkle with remaining cheese.
  7. Bake for 20-25 minutes, until cheese is melted and bubbly.

Notes

  • For extra flavor, add diced bell peppers to the beef mixture.
  • Garnish with sour cream and cilantro before serving.
