- 1 pound ground beef
- 1 can enchilada sauce
- 8 flour tortillas
- 2 cups shredded cheese
- 1 onion, chopped
- 1 teaspoon garlic powder
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Preheat oven to 350°F (175°C).
- In a skillet, brown the ground beef over medium heat. Drain excess fat.
- Add onion, garlic powder, chili powder, and cumin to the skillet, cooking until onion is tender.
- Spread a small amount of enchilada sauce in the bottom of a baking dish.
- Fill each tortilla with the beef mixture and a handful of cheese, roll up, and place seam-side down in the baking dish.
- Pour remaining enchilada sauce over the top and sprinkle with remaining cheese.
- Bake for 20-25 minutes, until cheese is melted and bubbly.
