Easy Greek Chicken Meatballs with Lemon Orzo

  • 1 pound ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 2 cloves garlic, minced
  • 1 egg
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 lemon, zested and juiced

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix together the ground chicken, breadcrumbs, feta cheese, parsley, garlic, egg, oregano, salt, and pepper until well combined.
  3. Form the mixture into small meatballs and place them on the prepared baking sheet.
  4. Bake in the preheated oven for 20-25 minutes or until cooked through and golden brown.
  5. While the meatballs are baking, bring the chicken broth to a boil in a saucepan. Add the orzo and cook according to package instructions.
  6. Stir in the lemon zest and juice to the cooked orzo just before serving.
  7. Serve the meatballs over the lemon orzo and garnish with additional parsley if desired.

Notes

  • For extra flavor, consider adding anchovies or olives to the meatball mixture.
