Easy Crock Pot Beef Roast (Slow Cooker Pot Roast)

  • 3 pounds beef chuck roast
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1 medium onion, chopped
  • 4 carrots, chopped
  • 4 potatoes, chopped
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce

Instructions

  1. Season the beef chuck roast with salt and pepper.
  2. In a skillet, heat olive oil over medium-high heat. Sear the roast on all sides until browned.
  3. Place the garlic, onion, carrots, and potatoes in the slow cooker.
  4. Place the seared roast on top of the vegetables.
  5. In a bowl, mix beef broth and Worcestershire sauce, then pour over the roast.
  6. Cover and cook on low for 8 hours or until the meat is tender.
  7. Remove the roast and vegetables, then serve.
