Easy Creamy Mexican Street Corn Pasta Salad Recipe

  • 8 ounces rotini pasta
  • 4 slices turkey bacon
  • 1 cup corn, grilled or canned
  • 1 cup mayonnaise
  • 1/2 cup sour cream
  • 1/2 cup chopped cilantro
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 lime, juiced

Instructions

  1. Cook the rotini pasta according to package instructions, then drain and cool.
  2. In a skillet, cook the turkey bacon until crispy, then chop it into pieces.
  3. In a large bowl, combine the cooled pasta, corn, bacon, mayonnaise, sour cream, cilantro, chili powder, cumin, salt, pepper, and lime juice.
  4. Toss everything together until well combined.
  5. Chill in the refrigerator for at least 30 minutes before serving.
