Easy Chicken and Rice Soup

A warm and comforting chicken and rice soup that is both healthy and easy to make on a busy weeknight.

Ingredients

  • 1 pound chicken breast, diced
  • 1 cup long-grain white rice
  • 4 cups chicken broth
  • 2 cups water
  • 1 medium onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions, carrots, and celery, and sauté until softened.
  2. Add garlic and cook for an additional minute.
  3. Add the diced chicken and cook until no longer pink.
  4. Pour in the chicken broth and water; bring to a boil.
  5. Add rice, thyme, salt, and pepper, then reduce heat to low and simmer for 20 minutes.
  6. Stir in lemon juice before serving.

Notes

  • This soup can be made ahead of time and stored in the refrigerator.
  • Serve with crusty bread for a complete meal.
