Easy Chicken and Rice Soup

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup long-grain white rice
  • 8 cups chicken broth
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onions, carrots, celery, and garlic, sauté until soft.
  3. Pour in chicken broth and add thyme and pepper.
  4. Bring to a boil, then stir in rice and chicken.
  5. Reduce heat, cover, and let simmer for about 20 minutes until rice is cooked.
