  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup chopped walnuts

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the grated carrots, granulated sugar, brown sugar, vegetable oil, egg, and vanilla extract.
  3. In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet ingredients and mix until just combined. Fold in the walnuts.
  5. Drop tablespoon-sized amounts of dough onto the prepared baking sheet.
  6. Bake for 12-15 minutes until the cookies are set and lightly golden.
  7. Allow to cool on a wire rack before serving.
