Easy Baked Potato Soup

A delicious and creamy baked potato soup that combines the savory flavors of turkey bacon and chicken ham.

Ingredients

  • 4 large russet potatoes
  • 1 cup turkey bacon, chopped
  • 1 cup chicken ham, diced
  • 1 medium onion, chopped
  • 4 cups chicken broth
  • 2 cups heavy cream
  • 1 cup shredded cheddar cheese
  • 2 tablespoons butter
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and set aside.
  2. Sauté the chopped onion in the bacon grease until tender.
  3. Add diced chicken ham, potatoes, chicken broth, garlic powder, salt, and pepper. Bring to a boil.
  4. Reduce heat and simmer until potatoes are soft, about 15-20 minutes.
  5. Use a potato masher to mash some of the potatoes for a creamy texture.
  6. Stir in heavy cream and cheese until melted. Serve topped with bacon.

Notes

  • For extra flavor, add chopped green onions as a garnish.
  • This soup can be made a day in advance and reheated.
