- 4 medium russet potatoes
- 6 slices turkey bacon
- 4 large eggs
- 1 cup shredded cheese (cheddar or your choice)
- 1/4 cup green onions, chopped
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- Preheat the oven to 400°F (200°C).
- Wash and pierce the potatoes with a fork. Bake for about 1 hour, until tender.
- Meanwhile, cook the turkey bacon in a skillet until crispy. Remove and crumble.
- Once the potatoes are cool, cut them in half and scoop out most of the flesh, leaving a small border.
- Mix the potato flesh with crumbled bacon, eggs, cheese, green onions, salt, and pepper.
- Return the filling to the potato skins and bake for an additional 20 minutes at 375°F (190°C).
- Serve warm and enjoy!

- For a spicier version, add jalapeños to the filling.
