Double Baked Bacon + Egg Potatoes

A delicious and comforting dish featuring double baked potatoes filled with turkey bacon and eggs.

Ingredients

  • 4 medium russet potatoes
  • 6 slices turkey bacon
  • 4 large eggs
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/4 cup green onions, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce the potatoes with a fork. Bake for about 1 hour, until tender.
  3. Meanwhile, cook the turkey bacon in a skillet until crispy. Remove and crumble.
  4. Once the potatoes are cool, cut them in half and scoop out most of the flesh, leaving a small border.
  5. Mix the potato flesh with crumbled bacon, eggs, cheese, green onions, salt, and pepper.
  6. Return the filling to the potato skins and bake for an additional 20 minutes at 375°F (190°C).
  7. Serve warm and enjoy!

Notes

  • For a spicier version, add jalapeños to the filling.
  • Use leftover potatoes to make this dish even easier.
