Crockpot Chicken Parmesan Soup

A hearty and comforting soup that brings the flavors of chicken parmesan to your slow cooker.

Ingredients

  • 1 pound boneless skinless chicken breasts
  • 4 cups chicken broth
  • 1 cup diced tomatoes
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 teaspoon Italian seasoning
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon chopped fresh basil
  • Salt and pepper to taste

Instructions

  1. Add the chicken breasts to the slow cooker.
  2. Pour in the chicken broth and add the diced tomatoes, carrots, and celery.
  3. Sprinkle the Italian seasoning over the top.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  5. Once the chicken is cooked, shred it in the slow cooker and stir to combine.
  6. Stir in the mozzarella and Parmesan cheese until melted.
  7. Garnish with fresh basil before serving.
