Crispy Smashed Potato Salad

A delightful potato salad with a twist of crispy flavors and turkey bacon.

Ingredients

  • 2 pounds baby potatoes
  • 4 slices turkey bacon
  • 1/4 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1/4 cup chopped green onions
  • 1/4 cup chopped fresh parsley
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Boil the baby potatoes in salted water until tender.
  2. Preheat the oven and bake turkey bacon until crispy.
  3. Slightly smash the boiled potatoes and place them on a baking sheet.
  4. Bake the smashed potatoes until golden and crispy.
  5. In a bowl, mix mayonnaise, Dijon mustard, green onions, and parsley.
  6. Add the crispy potatoes and crumbled turkey bacon to the mixture and gently toss.
  7. Season with salt and pepper and serve warm or chilled.

Notes

  • For extra flavor, add garlic powder to the mayonnaise mixture.
  • Can substitute regular bacon if desired.
