  • 4 slices turkey bacon
  • 1 cup chicken ham, diced
  • 1/4 cup olive oil
  • 2 tablespoons dijon mustard
  • 1 teaspoon garlic powder
  • Salt to taste
  • Pepper to taste
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Boil the baby potatoes until tender, then drain.
  2. Preheat oven to 425°F (220°C).
  3. Spread potatoes on a baking sheet and smash them gently.
  4. Brush with olive oil and sprinkle with garlic powder, salt, and pepper.
  5. Bake for 25-30 minutes until crispy and golden.
  6. Meanwhile, cook the turkey bacon until crispy, then chop into pieces.
  7. In a bowl, mix the dijon mustard, remaining olive oil, and chicken ham.
  8. Combine smashed potatoes with the dressing, turkey bacon, and parsley.
  9. Toss gently to combine and serve warm or at room temperature.
