Creamy Smothered Chicken and Rice

  • 4 chicken thighs
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 2 teaspoons paprika

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season chicken thighs with salt, pepper, and paprika.
  3. Brown the chicken thighs on both sides, about 5 minutes each side.
  4. Remove the chicken from the skillet and set aside.
  5. In the same skillet, add onions and garlic, sautéing until translucent.
  6. Add rice, stirring for a couple of minutes.
  7. Pour in chicken broth and heavy cream, stirring to combine.
  8. Return chicken to the skillet, cover, and simmer on low heat for 30 minutes, or until rice and chicken are cooked through.

Notes

  • For extra flavor, you can add vegetables such as peas or carrots.
