  • 1 medium butternut squash, peeled and cubed
  • 1 tablespoon olive oil
  • 1 pound spicy Italian sausage, casings removed
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the butternut squash with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until tender.
  3. While the squash is roasting, cook the rigatoni according to package instructions until al dente. Drain and set aside.
  4. In a large skillet, cook the sausage over medium heat until browned. Add garlic and sauté for 1 minute.
  5. Stir in the heavy cream and cooked butternut squash. Let simmer for 5 minutes.
  6. Add the rigatoni to the skillet, along with Parmesan cheese. Stir until well combined and heated through.
  7. Season with salt and pepper to taste.
  8. Serve garnished with fresh parsley.
