  • 6 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 cup heavy cream
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onion and garlic, sauté until translucent.
  3. Stir in carrots and celery, cook for 5 minutes.
  4. Add wild rice and chicken broth, bring to a boil.
  5. Reduce heat, cover, and simmer for 45 minutes.
  6. Stir in cooked chicken, heavy cream, thyme, salt, and pepper; cook for an additional 10 minutes.
  7. Garnish with parsley before serving.

Notes

  • For added flavor, use rotisserie chicken.
  • This soup freezes well, but add cream just before serving.
