Instructions

  1. In a large pot, combine the chicken, diced tomatoes, black beans, corn, and chicken broth.
  2. Bring to a boil and then reduce heat to simmer.
  3. Stir in heavy cream and enchilada sauce mix, and add cumin and garlic powder.
  4. Let cook for 20 minutes, stirring occasionally.
