  • 2 medium potatoes, diced
  • 4 slices turkey bacon, cooked and crumbled
  • 1 medium onion, chopped
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, sauté onion and garlic until translucent.
  2. Add cauliflower, potatoes, and vegetable broth. Bring to a boil and simmer until vegetables are tender.
  3. Blend the mixture until smooth, then stir in heavy cream, salt, and pepper.
