  • 1 pound butternut squash
  • 1 pound gnocchi
  • 8 ounces Italian sausage
  • 1 tablespoon fresh thyme
  • 1 tablespoon fresh sage
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and cube the butternut squash, then roast in the oven until tender.
  3. In a skillet, cook the Italian sausage until browned.
  4. Boil the gnocchi according to package instructions.
  5. In a large mixing bowl, combine the roasted squash, cooked sausage, thyme, sage, and heavy cream.
