1 pound butternut squash
1 package gnocchi
1 pound Italian sausage
2 cloves garlic, minced
1 cup heavy cream
1/2 cup grated Parmesan cheese
Salt to taste
Black pepper to taste
Fresh sage leaves for garnish
Instructions
Preheat the oven to 400°F (200°C).
Cut the butternut squash in half, remove seeds, and place cut-side down on a baking sheet. Roast for 30-40 minutes until tender.
While the squash is roasting, cook the Italian sausage in a skillet over medium heat until browned. Add the minced garlic and cook for an additional minute.
Once the squash is tender, scoop the flesh into a bowl and mash it until smooth.
Add the mashed squash to the skillet with sausage. Stir in the heavy cream and Parmesan cheese, mixing until well combined.
Cook gnocchi according to package instructions, then add to the sauce, stirring to coat.
Season with salt and black pepper to taste.
Serve hot, garnished with fresh sage leaves.
