- 4 cups chopped zucchini
- 1 cup onion, diced
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon nutmeg
- In a large pot, heat olive oil over medium heat. Add onions and garlic, sauté until translucent.
- Stir in chopped zucchini and cook for 5 minutes.
- Add vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes.
- Blend the soup until smooth, then return to pot.
