Cream of Zucchini Soup

A creamy and comforting zucchini soup, perfect for a cozy meal.

Ingredients

  • 4 cups chopped zucchini
  • 1 cup onion, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions and garlic, sauté until translucent.
  2. Stir in chopped zucchini and cook for 5 minutes.
  3. Add vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes.
  4. Blend the soup until smooth, then return to pot.
  5. Stir in heavy cream, salt, pepper, and nutmeg. Simmer for another 5 minutes.
  6. Serve hot and enjoy!
