Cranberry Orange Pound Cake

A delightful homemade dessert combining the tartness of cranberries with the sweetness of oranges.

  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 1 tablespoon orange zest
  • 1 cup fresh cranberries

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, mix together flour, baking powder, baking soda, and salt.
  3. In another bowl, cream the butter and sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla and orange zest.
  5. Gradually mix in the dry ingredients, then fold in the cranberries.
  6. Pour the batter into the prepared loaf pan and bake for 60-70 minutes or until a toothpick comes out clean.
  7. Allow to cool before serving.

Notes

  • For a sweeter cake, consider adding a glaze of orange juice and powdered sugar.
  • This cake can also be made with dried cranberries if fresh ones are unavailable.
