Ingredients

  • 4 cups fresh corn, cooked and cut off the cob
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 1/2 cup bell pepper, diced
  • 1/4 cup fresh cilantro, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lime juice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large bowl, combine the cooked corn, cherry tomatoes, red onion, bell pepper, and cilantro.
  2. In a small bowl, whisk together the olive oil, lime juice, salt, and black pepper.
  3. Pour the dressing over the salad and toss gently to combine.
  4. Chill in the refrigerator for at least 30 minutes before serving.
