Copycat La Madeleine Country Potato Soup

A delicious and creamy potato soup that replicates the famous La Madeleine recipe.

Ingredients

  • 4 large russet potatoes
  • 1 medium onion
  • 3 cloves garlic
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1/4 cup chopped chives

Instructions

  1. Peel and dice the potatoes, onion, and garlic.
  2. In a large pot, melt the butter over medium heat and sauté the onion and garlic until translucent.
  3. Add the diced potatoes and chicken broth, bring to a boil, then simmer until the potatoes are tender.
  4. Use an immersion blender to blend the soup until smooth.
  5. Stir in the heavy cream, salt, pepper, and paprika. Simmer for another 5 minutes.
  6. Serve hot, garnished with chopped chives.

Notes

  • You can substitute chicken broth with vegetable broth for a vegetarian option.
  • Add cheese for a creamy twist.
