- 1 pound chicken thighs, boneless and skinless
- 4 slices turkey bacon
- 2 large potatoes, peeled and diced
- 1 medium onion, chopped
- 3 carrots, sliced
- 3 celery stalks, chopped
- 4 cups chicken broth
- 2 cloves garlic, minced
- 1 teaspoon thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 1 tablespoon fresh parsley, chopped
- In a large pot, heat olive oil over medium heat. Add the turkey bacon and cook until crisp. Remove and set aside.
- In the same pot, add onions, carrots, and celery. Cook until softened.
- Add garlic and cook for another minute.
- Stir in chicken thighs, potatoes, chicken broth, thyme, salt, and pepper. Bring to a boil.
- Reduce heat and let simmer for 30 minutes or until chicken is fully cooked.
- Remove chicken, shred and return to the pot. Stir in the cooked bacon and parsley before serving.
Notes
- This soup can be prepared in advance and tastes even better the next day.
- Feel free to add other vegetables such as green beans or peas for more variety.
