Comforting Chicken Soup with Potatoes

A warm and hearty chicken soup recipe featuring tender chicken, potatoes, and savory turkey bacon that is perfect for chilly days.

Ingredients

  • 1 pound chicken thighs, boneless and skinless
  • 4 slices turkey bacon
  • 2 large potatoes, peeled and diced
  • 1 medium onion, chopped
  • 3 carrots, sliced
  • 3 celery stalks, chopped
  • 4 cups chicken broth
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the turkey bacon and cook until crisp. Remove and set aside.
  2. In the same pot, add onions, carrots, and celery. Cook until softened.
  3. Add garlic and cook for another minute.
  4. Stir in chicken thighs, potatoes, chicken broth, thyme, salt, and pepper. Bring to a boil.
  5. Reduce heat and let simmer for 30 minutes or until chicken is fully cooked.
  6. Remove chicken, shred and return to the pot. Stir in the cooked bacon and parsley before serving.

Notes

  • This soup can be prepared in advance and tastes even better the next day.
  • Feel free to add other vegetables such as green beans or peas for more variety.
