  • 2 cups jasmine rice
  • 1 pound chicken thighs, boneless and skinless
  • 1 can coconut milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon soy sauce
  • 1 tablespoon vegetable oil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Rinse the jasmine rice under cold water until the water runs clear.
  2. In a pot, combine the rinsed rice, coconut milk, and 1 cup of water. Bring to a boil, then reduce heat to low and cover. Cook for 15-20 minutes or until rice is fluffy.
  3. Meanwhile, in a skillet, heat vegetable oil over medium-high heat. Season chicken thighs with garlic powder, onion powder, salt, and pepper.
  4. Add the chicken to the skillet and cook for about 6-8 minutes on each side, or until fully cooked. Remove from heat and let rest before slicing.
  5. Fluff the cooked rice and serve topped with sliced chicken and garnish with fresh cilantro. Finish with a drizzle of soy sauce if desired.

Notes

  • For extra flavor, marinate the chicken in coconut milk and spices for a few hours before cooking.
  • This dish can be served with lime wedges for an added citrus kick.
