- 2 cups jasmine rice
- 1 pound chicken thighs, boneless and skinless
- 1 can coconut milk
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 tablespoon soy sauce
- 1 tablespoon vegetable oil
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 cup fresh cilantro, chopped
- Rinse the jasmine rice under cold water until the water runs clear.
- In a pot, combine the rinsed rice, coconut milk, and 1 cup of water. Bring to a boil, then reduce heat to low and cover. Cook for 15-20 minutes or until rice is fluffy.
- Meanwhile, in a skillet, heat vegetable oil over medium-high heat. Season chicken thighs with garlic powder, onion powder, salt, and pepper.
- Add the chicken to the skillet and cook for about 6-8 minutes on each side, or until fully cooked. Remove from heat and let rest before slicing.
- Fluff the cooked rice and serve topped with sliced chicken and garnish with fresh cilantro. Finish with a drizzle of soy sauce if desired.
