Ingredients
Scale
2 cups jasmine rice
1 pound chicken breast, diced
1 can coconut milk
2 cups chicken broth
1 tablespoon ginger, minced
3 cloves garlic, minced
1 tablespoon soy sauce
1 tablespoon lime juice
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup cilantro, chopped
1 lime, cut into wedges
Instructions
Rinse the jasmine rice under cold water until the water runs clear.
In a pot, combine the rice, coconut milk, chicken broth, ginger, garlic, salt, and pepper. Bring to a boil.
Reduce the heat to low, cover, and simmer for about 15 minutes or until the rice is tender.
While the rice is cooking, in a skillet, heat oil over medium heat and add the diced chicken. Cook until browned and fully cooked through.
Add the soy sauce and lime juice to the chicken, stirring to combine.
Once the rice is cooked, fluff it with a fork and stir in the chopped cilantro.
Serve the coconut rice in bowls, topped with the chicken and garnished with lime wedges.
Notes
For added flavor, consider marinating the chicken in lime juice and soy sauce for 30 minutes before cooking.
This dish can be garnished with extra cilantro or sliced green onions for freshness.
