  • 1/2 cup onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/4 cup flour
  • 2 tablespoons butter
  • 1 teaspoon thyme
  • salt to taste
  • pepper to taste

Instructions

  1. In a large pot, melt butter over medium heat. Add onions and garlic, sauté until translucent.
  2. Add carrots, celery, and potatoes. Cook for about 5 minutes.
  3. Stir in the flour and cook for 1 minute, then gradually add chicken broth.
  4. Bring to a simmer and add diced chicken, thyme, salt, and pepper. Cook until chicken is done.
  5. Stir in peas and heavy cream. Cook for an additional 5 minutes. Serve hot.
