Chicken Pot Pie Soup

Ingredients

  • 4 slices turkey bacon
  • 1 cup diced onion
  • 2 cups diced carrots
  • 2 cups diced celery
  • 3 cloves garlic, minced
  • 1/3 cup all-purpose flour
  • 4 cups chicken broth
  • 1 cup frozen peas
  • 1 teaspoon dried thyme
  • 2 cups cooked chicken, shredded
  • 1 cup heavy cream
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and crumble.
  2. Add onions, carrots, and celery to the pot, sauté until soft.
  3. Stir in garlic and cook for another minute.
  4. Sprinkle in the flour, stirring until it’s absorbed.
  5. Gradually add chicken broth, stirring continuously until thickened.
  6. Mix in the peas, thyme, chicken, and cream. Simmer for 10 minutes.
  7. Add salt and pepper to taste. Serve garnished with crumbled turkey bacon.

Notes

  • For a gluten-free version, substitute flour with cornstarch.
  • This soup can be made ahead and reheated.
