Chicken Pot Pie Soup

  • 1 cup turkey bacon, chopped
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 cups chicken broth
  • 1 cup carrots, chopped
  • 1 cup celery, chopped
  • 2 cups cooked chicken, shredded
  • 1 cup frozen peas
  • 1/4 cup all-purpose flour
  • 2 cups whole milk
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped turkey bacon and cook until crispy.
  3. Stir in the diced onion and garlic, cooking until the onion is translucent.
  4. Add chicken broth, carrots, and celery. Bring to a boil.
  5. Reduce heat and simmer for 10 minutes.
  6. Stir in cooked chicken, frozen peas, thyme, salt, and black pepper.
  7. In a separate bowl, whisk together the flour and milk until smooth.
  8. Gradually add the flour mixture to the soup, stirring constantly until thickened.
  9. Serve hot and enjoy!
