  • 4 ounces turkey bacon, chopped
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 4 cups chicken broth
  • 2 cups shredded cooked chicken
  • 2 cups frozen mixed vegetables
  • 1 cup heavy cream
  • 2 teaspoons dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons cornstarch (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add turkey bacon and cook until crispy.
  2. Add onion, garlic, carrots, and celery. Sauté until vegetables are tender.
  3. Pour in chicken broth and bring to a boil.
  4. Add shredded chicken, frozen vegetables, cream, thyme, salt, and pepper. Simmer for 20 minutes.
  5. If desired, mix cornstarch with a little water to thicken the soup and add it at the end.
