- 1 tablespoon olive oil
- 4 ounces turkey bacon, chopped
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 stalks celery, diced
- 4 cups chicken broth
- 2 cups shredded cooked chicken
- 2 cups frozen mixed vegetables
- 1 cup heavy cream
- 2 teaspoons dried thyme
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons cornstarch (optional)
- In a large pot, heat olive oil over medium heat. Add turkey bacon and cook until crispy.
- Add onion, garlic, carrots, and celery. Sauté until vegetables are tender.
- Pour in chicken broth and bring to a boil.
- Add shredded chicken, frozen vegetables, cream, thyme, salt, and pepper. Simmer for 20 minutes.
