Chicken Pot Pie Soup

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 2 cups mixed vegetables (carrots, peas, corn)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/3 cup heavy cream
  • 1/4 cup all-purpose flour

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the onion and garlic and sauté until soft.
  3. Stir in the chicken broth and bring to a boil.
  4. Add in the cooked chicken, mixed vegetables, thyme, rosemary, salt, and pepper. Simmer for 10 minutes.
  5. In a separate bowl, whisk together the heavy cream and flour until smooth.
  6. Gradually add the cream mixture to the soup, stirring constantly, until thickened.
  7. Remove from heat and serve hot.

Notes

  • This soup is great for meal prep and can be stored in the fridge for up to 3 days.
  • For a thicker soup, add more flour.
