Chicken Pot Pie Soup

A warm and delicious Chicken Pot Pie Soup that captures all the comforting flavors of the classic dish.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups potatoes, diced
  • 1 cup frozen peas
  • 1 tablespoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup heavy cream
  • 1/4 cup all-purpose flour

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chicken and cook until browned on all sides.
  3. Remove chicken and set aside. In the same pot, add carrots, celery, onion, and garlic.
  4. Cook until vegetables are tender.
  5. Add chicken broth, potatoes, peas, thyme, salt, and pepper.
  6. Bring to a boil, then reduce heat and simmer until potatoes are tender.
  7. Shred the cooked chicken and return it to the pot.
  8. In a small bowl, whisk together heavy cream and flour until smooth. Stir into the soup and cook until thickened.
  9. Serve hot and enjoy!

Notes

  • For extra flavor, add a bay leaf while simmering.
  • Try adding other vegetables like corn or green beans.
