  • 1 cup black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup salsa
  • 2 cups cooked rice
  • 1 cup shredded cheese
  • 1 tablespoon taco seasoning
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine shredded chicken, black beans, corn, salsa, cooked rice, taco seasoning, and half of the cheese.
  3. Drizzle olive oil in a baking dish, then transfer the mixture into the dish.
  4. Top with remaining cheese.
  5. Bake for 25-30 minutes or until heated through and cheese is bubbly.
