- 2 pounds potatoes, diced
- 1 pound smoked sausage, sliced
- 1 cup shredded cheddar cheese
- 1 packet ranch seasoning mix
- 1/2 cup sour cream
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine the diced potatoes, smoked sausage, olive oil, ranch seasoning, garlic powder, salt, and pepper. Toss until well coated.
- Spread the mixture on a baking sheet and roast for 25-30 minutes, until the potatoes are tender and golden brown.
