  • 2 pounds potatoes, diced
  • 1 pound smoked sausage, sliced
  • 1 cup shredded cheddar cheese
  • 1 packet ranch seasoning mix
  • 1/2 cup sour cream
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine the diced potatoes, smoked sausage, olive oil, ranch seasoning, garlic powder, salt, and pepper. Toss until well coated.
  3. Spread the mixture on a baking sheet and roast for 25-30 minutes, until the potatoes are tender and golden brown.
  4. Remove from the oven and sprinkle with cheese. Return to the oven and bake for an additional 5-10 minutes until the cheese is melted and bubbly.
  5. Drizzle with sour cream before serving.
