Caprese Pasta Salad with Creamy Balsamic Dressing

A light and refreshing twist on traditional pasta salad with fresh mozzarella, tomatoes, and a creamy balsamic dressing.

Ingredients

  • 8 ounces pasta
  • 1 cup cherry tomatoes, halved
  • 8 ounces fresh mozzarella, cubed
  • 1/4 cup fresh basil, chopped
  • 1/4 cup balsamic vinegar
  • 1/2 cup mayonnaise
  • 1 teaspoon garlic powder
  • Salt to taste
  • Pepper to taste

Instructions

  1. Cook pasta according to package instructions. Drain and let cool.
  2. In a large bowl, combine the cooled pasta, cherry tomatoes, mozzarella, and basil.
  3. In a separate bowl, whisk together balsamic vinegar, mayonnaise, garlic powder, salt, and pepper.
  4. Pour the dressing over the pasta salad and toss to combine.
  5. Chill in the refrigerator for at least 30 minutes before serving.

Notes

  • For extra flavor, add a drizzle of olive oil before serving.
