  • 2 cups butternut squash, roasted and mashed
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 package wonton wrappers
  • 4 slices turkey bacon, cooked and crumbled
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. In a bowl, combine the mashed butternut squash, ricotta cheese, Parmesan cheese, crumbled turkey bacon, salt, and pepper.
  2. Place a small spoonful of the mixture onto the center of a wonton wrapper.
  3. Moisten the edges of the wrapper with water and fold it over to form a triangle, sealing the edges tightly.
  4. In a pot, bring water to a boil and cook the ravioli in batches for about 3-4 minutes or until they float to the surface.
  5. Drain and toss ravioli with olive oil before serving.
