  • 2 cups butternut squash, roasted and mashed
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 1 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 3 cups all-purpose flour
  • 2 eggs, for pasta dough
  • 1 tablespoon olive oil
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Roast the butternut squash until tender, about 30 minutes.
  3. In a bowl, mix the roasted squash, ricotta, Parmesan, egg, salt, nutmeg, and black pepper until combined.
  4. In another bowl, create the pasta dough by mixing flour and eggs until a dough forms; knead until smooth.
  5. Roll out the pasta dough thinly, and cut into circles.
  6. Place a spoonful of the filling onto each circle, fold and seal.
  7. Boil ravioli in salted water until they float, about 3-4 minutes.
  8. Serve with your favorite sauce.
