- 2 cups butternut squash, roasted and mashed
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1 egg
- 1 teaspoon salt
- 1/4 teaspoon nutmeg
- 3 cups all-purpose flour
- 2 eggs, for pasta dough
- 1 tablespoon olive oil
- 1/2 teaspoon black pepper
- Preheat your oven to 400°F (200°C).
- Roast the butternut squash until tender, about 30 minutes.
