  • 2 pounds beef chuck roast
  • 1 pound lamb shanks
  • 6 dried guajillo chiles
  • 4 dried pasilla chiles
  • 1 onion, quartered
  • 4 garlic cloves
  • 2 bay leaves
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • 2 cups beef broth
  • 12 corn tortillas
  • 1 lime, cut into wedges
  • 1/2 cup chopped cilantro

Instructions

  1. Toast the chiles in a hot skillet until fragrant.
  2. Soak the chiles in hot water until softened.
  3. Blend the soaked chiles with onion, garlic, spices, and broth until smooth.
