  • 1 cup diced potatoes
  • 1 cup green beans
  • 1 onion chopped
  • 4 cups beef broth
  • 1 can diced tomatoes
  • 2 cloves garlic minced
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. In a large pot, brown the beef stew meat over medium heat.
  2. Add the onions and garlic, cooking until softened.
  3. Stir in the carrots, celery, and potatoes.
  4. Pour in the beef broth and add the diced tomatoes.
  5. Season with thyme, salt, and pepper.
  6. Bring to a boil, then reduce heat and cover.
  7. Let it simmer for about 1.5 hours or until the meat is tender.
  8. Add green beans and cook for an additional 15 minutes.
