Ingredients

  • 2 tablespoons olive oil
  • 1 cup broccoli florets
  • 1 cup quinoa
  • 1/4 cup mayonnaise
  • 2 tablespoons sriracha sauce
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix the mayonnaise, sriracha, garlic powder, salt, and pepper.
  3. Coat the salmon fillets with olive oil and place on a baking sheet.
  4. Spread half of the bang bang sauce over the salmon.
  5. Bake for 12-15 minutes until the salmon is cooked through.
  6. While the salmon bakes, cook quinoa according to package instructions.
  7. Steam broccoli until tender.
  8. Assemble bowls with quinoa, broccoli, and salmon. Drizzle with remaining sauce.
