  • 4 large russet potatoes
  • 8 ounces turkey bacon
  • 1 cup diced chicken ham
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup chopped chives

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Bake the potatoes for 45-60 minutes, until tender. Let cool, then scoop out the insides.
  3. In a large pot, cook the turkey bacon until crispy. Remove and crumble.
  4. Add olive oil, onion, and garlic; sauté until softened.
  5. Stir in the chicken broth and potato insides. Simmer for 10 minutes.
  6. Add heavy cream, season with salt and pepper, and mix until creamy.
  7. Garnish with chicken ham, chives, and crumbled bacon before serving.

Notes

  • For a vegetarian option, omit turkey bacon and use vegetable broth.
  • Top with shredded cheese and sour cream for extra indulgence.
