  • 1 cup rolled oats
  • 1 cup whole wheat flour
  • 1/2 cup brown sugar
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 2 eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix applesauce, eggs, and vanilla until well combined.
  3. In another bowl, combine the dry ingredients: oats, flour, sugar, baking soda, baking powder, cinnamon, and salt.
  4. Gradually add the dry mixture to the wet ingredients and stir until just combined.
  5. Pour the batter into a greased muffin tray.
  6. Bake for 20-25 minutes or until a toothpick comes out clean.
