Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined.
  3. Press the mixture firmly into the bottom of a springform pan.
  4. In another bowl, beat the cream cheese, sour cream, brown sugar, and vanilla until smooth.
  5. Add the eggs one at a time, mixing well after each addition.
  6. Fold in the chopped apples and cinnamon.
  7. Pour the cheesecake filling over the crust.
  8. In a separate bowl, combine flour, oats, walnuts, and brown sugar for the crumble mixture.
