2 cups all-purpose flour
1 cup sugar
1 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk
1/3 cup vegetable oil
2 eggs
1 tablespoon vanilla extract
2 teaspoons ground cinnamon
Instructions
Preheat the oven to 350°F (175°C).
In a mixing bowl, combine flour, sugar, baking soda, and salt.
In another bowl, mix buttermilk, oil, eggs, and vanilla.
Pour the wet ingredients into the dry ingredients and stir until just combined.
In a separate bowl, mix sugar and cinnamon for the filling.
Pour half of the batter into a greased loaf pan, sprinkle with half of the cinnamon sugar filling, then add the remaining batter and top with the rest of the filling.
Swirl a knife through the batter to create a marbled effect.
Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
Let cool before slicing and serving.
