Air Fryer Seafood Baked Potato

  • 4 large russet potatoes
  • 1 pound mixed seafood (shrimp, crab, and scallops)
  • 1/2 cup sour cream
  • 1/2 cup shredded cheese
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Preheat the air fryer to 400°F (200°C).
  2. Wash and prick the potatoes with a fork, then rub them with olive oil and season with salt.
  3. Place the potatoes in the air fryer basket and cook for 35-40 minutes until tender.
  4. In a bowl, combine seafood, garlic powder, paprika, and a pinch of salt and pepper.
  5. Cook the seafood in the air fryer for 8-10 minutes.
  6. Once the potatoes are cooked, slice them open and fluff the insides.
  7. Top with seafood mixture, sour cream, and shredded cheese.
  8. Return to the air fryer for 2-3 minutes to melt the cheese.
