30 Minute Thai Chicken Soup

This easy 30-minute Thai chicken soup is perfect for a quick weeknight dinner.

Ingredients

  • 1 pound boneless chicken breasts, thinly sliced
  • 1 can coconut milk
  • 4 cups chicken broth
  • 1 tablespoon red curry paste
  • 1 tablespoon fish sauce
  • 1 tablespoon lime juice
  • 2 cups mixed vegetables (carrots, bell peppers, snap peas)
  • 1 cup mushrooms, sliced
  • 2 green onions, sliced
  • fresh cilantro for garnish

Instructions

  1. Heat vegetable oil in a large pot over medium heat.
  2. Add the chicken and cook until no longer pink, about 5 minutes.
  3. Stir in the coconut milk, chicken broth, red curry paste, and fish sauce.
  4. Bring to a simmer and add the lime juice, mixed vegetables, and mushrooms.
  5. Cook for an additional 10 minutes until vegetables are tender.
  6. Serve hot, garnished with green onions and cilantro.

Notes

  • For extra spice, add more red curry paste.
  • Use leftover rotisserie chicken for a quicker option.
